Creamy Chicken with Bacon in the Slow Cooker



 Chicken in a creamy sauce, topped with bacon, made easy in the slow cooker!


Servings: 12
Prep time: 10 minutes
Total time: 8 hours

2 lbs boneless skinless chicken breasts
1.5 Tbsp dry ranch mix
1/2 C reduced-sodium soy sauce
1/2 C milk, divided
1/2 C mayonnaise
1 C grated parmesan
1 Tbsp corn starch
12 oz bacon, cooked and crumbled (see this tip)


  1. Arrange the chicken in the bottom of your slow cooker.
  2. Sprinkle ranch mix over the top of the chicken, and add soy sauce.
  3. Cook on low for 7-8 hours.
  4. About 20 minutes before you'd like to eat, combine 2 Tbsp of the milk with the corn starch in a small bowl. 
  5. Whisk the remaining milk and mayonnaise together in a medium bowl.  
  6. Remove the chicken from the slow cooker and place on a plate.
  7. Add the mayonnaise and corn starch mixtures to the slow cooker.  Stir to combine well.
  8. Return the chicken to the slow cooker and cover.  Let the chicken cook for another 10-15 minutes.
  9. Add crumbled bacon immediately before serving.
  10. Serve hot with brown rice or whole wheat pasta.  Garnish with sliced green onions if desired.
