Chewy Chocolate Granola Bars - vegan, nut-free


Healthy granola bars made from simple, natural ingredients!

Instead of chocolate chips, I mix cocoa in with the oats to get a satisfying chocolate flavor.



My kids (and their friends) love this recipe.  These bars never last long at our house.

The recipe calls for coconut oil, but if you don't have that on hand, it works equally well with butter or even margarine.

So I have been making this recipe for years, but it wasn't until yesterday that I discovered a way to make this recipe even easier.  My Kitchen Aid!  Why had I never used it for making granola bars?  It makes the mixing step so easy!  You can definitely mix this by hand (it's what I have done for years), but you can make life a bit easier by using a Kitchen Aid or something similar.

Servings: 20
Time: 30 minutes

4 1/2 C rolled oats
3/4 C whole wheat flour
1/4 C cocoa
1/4 C brown sugar
1 tsp baking soda
1 C coconut oil (or butter or margarine)
1/2 C honey
1 tsp vanilla

  1. Preheat the oven to 325F.
  2. Prepare a 9x13 baking dish with cooking spray.
  3. In a large bowl, combine the oats, flour, cocoa, sugar, and soda.
  4. Add the coconut oil, honey and vanilla.  Mix until well combined.
  5. Spread the oat mixture in the baking dish and press it down with your hand or a spoon.
  6. Bake for 20-22 minutes.
  7. Let cool for 10-15 minutes before cutting into bars.
  8. These will be crumbly at first, but they will firm up as they cool.  If you want them to firm up faster, place them in the fridge.
