I love Indian food! This slow cooker recipe is super easy and way healthier than take-out. It's a great way to get my fix of Indian chicken.

2 onions, quartered
2 jalapeno peppers, seeded
1 Tbsp minced garlic
1 Tbsp ginger paste
2 lbs boneless skinless chicken thighs
2 Tbsp butter
1 tsp cumin
1/2 tsp fennel seeds
1 tsp cardamom
1 tsp paprika
1 tsp turmeric
1/4 tsp cinnamon
1.5 tsp chicken bouillon
1 1/2 C water
1 Tbsp sugar
1/2 tsp salt
1/2 C heavy cream
- Combine the onions, jalapenos, garlic and ginger in a blender or food processor. Blend until smooth.
- Cut each chicken thigh into four pieces.
- Place butter in the bottom of your slow cooker. Top with butter and the onion mixture.
- Add cumin, fennel, cardamom, paprika, turmeric, cinnamon, chicken bouillon, sugar, salt and water to the slow cooker.
- Cook on low for 7-8 hours.
- Before serving, add the heavy cream and salt to taste. If desired, garnish with green onions or cilantro.
- Serve over brown rice or quinoa.
