Grain-free pumpkin muffins


These easy-to-make muffins are moist, filling, and nutritious!  

Servings: 12 muffins
Time: 30 minutes

1/2 C coconut flour
3/4 C almond flour
4 tsp pumpkin pie spice
1 1/4 tsp baking soda
1/4 tsp salt
4 large eggs
1/2 C vegetable oil
1/2 C honey
1/2 C pumpkin puree
2 T brown sugar
2 tsp vanilla

  1. Preheat the oven to 350F.
  2. Line 12 muffin cups with muffin liners.
  3. In a large bowl, mix together the first five ingredients.
  4. Add the remaining ingredients and mix until well combined.
  5. Scoop the batter evenly into the muffin cups.
  6. Bake for 15 minutes.
