These easy-to-make muffins are moist, filling, and nutritious!
Servings: 12 muffins
Time: 30 minutes
1/2 C coconut flour
3/4 C almond flour
4 tsp pumpkin pie spice
1 1/4 tsp baking soda
1/4 tsp salt
4 large eggs
1/2 C vegetable oil
1/2 C honey
1/2 C pumpkin puree
2 T brown sugar
2 tsp vanilla
- Preheat the oven to 350F.
- Line 12 muffin cups with muffin liners.
- In a large bowl, mix together the first five ingredients.
- Add the remaining ingredients and mix until well combined.
- Scoop the batter evenly into the muffin cups.
- Bake for 15 minutes.
